Our Cucina con Noi series celebrates the traditions that bring Italian food and family together with an authentic, hands-on Italian sausage-making experience!

Join us at Il Centro for a full evening dedicated to the art of traditional Italian sausage making, led by our sausage maker extraordinaire, Luigi Bastone. Rooted in family tradition and the time-honoured techniques passed down through generations, this workshop is an opportunity to discover the secrets behind homemade Italian sausages and experience the craftsmanship that makes them so special.

During this hands-on class, Luigi will guide you through the process of making Italian sausages from scratch, sharing his knowledge, techniques, and passion for preserving these cherished culinary traditions. You’ll learn how to prepare and season the meat, work with natural casings, and create two classic varieties: mild and spicy Italian sausages.

You’ll also have the opportunity to sample Luigi’s homemade salami and capocollo, discovering the flavours and traditions behind these beloved Italian specialties. Best of all, you’ll take home the sausages you make yourself, along with the skills and confidence to continue the tradition in your own kitchen.

Bring an apron, a clean container, and your appetite! Feel free to bring your own bottle of wine if you'd like!

The workshop will take place on Monday, November 16, from 6:00 - 9:30 pm at the Italian Cultural Centre.
